Sunday Bites: Baked Lemon Cod with Mango Salsa

Happy Sunday, my friends!

Sundays at our house are days to chill back and enjoy some quality time. Weekdays can tend to be quite hectic and Saturdays usually involve us shopping for food, running errands, working out, etc… Sundays are for sleeping in a bit, like until 9 (hurrah) and starting our days slowly. Doesn’t mean the workout is being skipped though!

Sundays are also the days we have more time to experiment in the kitchen. The two of us love to cook! Therefore, Sundays we will be sharing our favorite recipes with you all. We try to keep things as clean as possible, but without any harsh restrictions. We basically go with the flow in terms of food, so some things will be vegetarian, some vegan, and every now and then we get fishy (pun intended) as well to change things a bit. The most important thing is keeping it healthy, while maintaining things tasty. Life is too short for a plate only filled with lettuce!

The first recipe we will be sharing today is simply the best for a spring/summer afternoon! It would be great if we could have some summer weather in Germany right now. In the meantime, we can just dream of sunshine and warm temperatures. Something about the combination of fish and fruit is simply the bomb! This salsa recipe is just so fresh it takes freshness to the next level. Buon appetito!

Baked Lemon Cod with Mango Salsa

  1. Mango Salsa
  2. • ½ mango, peeled and diced
  3. • ¼ cucumber, peeled and diced
  4. • 1 Tbs diced red onions
  5. • juice of ½ of a lemon
  6. • salt & pepper, to taste
  7. Baked Cod
  8. • 2 cod fish fillets
  9. • 1 tablespoons lemon juice
  10. • 1 tablespoon olive oil
  11. • salt & pepper, to taste
  1. Mango Salsa
  2. Combine all the ingredients and leave for at least 30 min. in the fridge to enhance the flavors. As simple as that!
  3. Baked Cod
  4. Pre-heat oven to 200°C.
  5. Drizzle half of the olive oil on a baking dish Place cod fillets on the baking dish and drizzle the remaining olive oil on top. Squeeze fresh lemon juice on top. Sprinkle with salt and pepper to taste.
  6. Bake until its flesh is opaque but still juicy, about 15 to 20 minutes.
  7. Serve the cod fillets and the mango salsa with some rice, quinoa, or your favorite grain.
