Sunday Bites: Protein Pancakes

 I hope your weekend is going well. For me, the best part about weekends is the possibility of waking up slowly and and working out without worrying about the time. I’m one of those happy/crazy (depending on your point of view) people that like to start their days with a workout. Some people say they don’t have enough energy to exercise on an empty stomach. I, on the other hand, love it! It puts me in a perfect frame of mind for a happy day.

 After working out I am famished though and my go-to breakfast these days are protein pancakes. There are many recipes for protein pancakes out there, but I tweeked things here and there, developing what I find works best for me. You can use a multitude of different flavors for the protein powder. My favorite ones are chocolate and vanilla. I personally prefer vegan protein powders since my body doesn’t handle whey very well, but the recipe would work with whey and casein based protein as well.

The great thing about this recipe is that it can be customized, so you never have the feeling that you are eating the same thing every day. Vanilla protein mixes wonderfully with cinnamon! Chocolate and peanut butter is a match made in heaven! The possibilities for toppings are endless too. Berries with honey and dried coconut or hemp seeds are my personal favorites.

Protein Pancakes

  1. 1 banana
  2. 2 scoops protein powder (around 44 g)
  3. 2 eggs
  4. 1 Tbsp chia seeds
  5. 1 tsp maca powder
  6. splash of almond or coconut milk (you may use regular milk if you prefer)
  7. coconut oil for frying pan
  1. Pre-heat a small dollop (1/4 tsp) of coconut oil on a frying pan over low heat.
  2. Mash the banana in a shallow bowl.
  3. Add protein powder, eggs, chia seeds, maca powder and milk and stir until all ingredients are fully combined.
  4. Pour or scoop the batter onto the frying pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
  1. I like to re-apply coconut oil for every pancake since I find that pancakes made with vegan protein tend to stick a lot. A silicone brush helps distribute small quantities of the oil on the entire frying pan.
  2. The chia seeds and maca powder are optional and the recipe still works without them. But if you can, why not superfood your breakfast?!
