The Ultimate Summer Salad

Happy (hot as well) Sunday!

I don’t know about you but when the weather gets really hot, my appetite gets really small. Other than watermelons and ice cream there is not much else that I want to eat, much less heavy things like pasta & co. But eating ice cream all day would be bad. Not much clean eating in that. So instead I want to present you today with my favorite go-to summer salad recipe. This is technically a fruit salad, but savory. So fresh, so light but packed with flavor, this salad with a side of bruschetta is a favorite in our home.

The base is a mixture of tomatoes and peaches.  Tomatoes are an everyday staple for us and Beefsteak tomatoes are just a dream come true. If you can’t find them in your area, regular tomatoes, cherry tomatoes, or other kinds would also work. Peaches are mine and Tore’s favorite fruit (along with the watermelon mentioned above). Since we only get peaches for a few months here in Germany, we eat as much as possibly human during that short period of time. #obsessions

  1. 4 medium beeksteak tomatoes, diced
  2. 3 peaches, diced
  3. 1 avocado, diced
  4. 2 tbsp chives
  5. 1/3 red onion, diced
  6. 2 tbsp olive oil
  7. 2 tsp lemon juice
  8. salt and pepper to taste
  1. Dice the tomatoes, peaches, avocado and onions.
  2. Combine all ingredients in a large serving bowl.
  3. Enjoy!
  1. The 4 beeksteak tomatoes I used weighed about 2.5 pounds. When using other tomatoes adjust quantities to obtain that weight.
