The Fastest Chocolate Mug Cake (Vegan)

Happy Sunday!

Yesterday we had a lovely little day trip to Regensburg, which is just a 1 1/2 hour train trip from Munich. It’s a lovely little town in south-east Germany that is a UNESCO World Heritage Site (its medieval town center). Coming back at the end of the afternoon, we were a bit hungry so I prepared a snack that would be fast, easy and healthy to eat with some tea. I decided to make chocolate mug cakes, because why not? They are the fastest cakes to make and also the safest: making individual portions prevents me from the oh-so-famous “just another little thin slice” dance. What is also great about these cakes is that they are vegan, free from white flour and refined sugar free. So they are great for keeping your blood sugar stable, but you still get the sweet treat. 

The next time you feel like a small sweet snack, give these a try. I promise you there is nothing faster or simpler…ok, maybe eating an apple. I still prefer these though.

Chocolate Mug Cakes

Ingredients
  1. 1 1/2 tbsp cocoa powder
  2. 3 tbsp spelt flour
  3. 1/8 tsp salt
  4. 1/2 tsp stevia
  5. 1 tsp honey
  6. 1/4 tsp baking powder
  7. 2 tsp coconut oil
  8. 3 tablespoons nut milk (I used coconut milk)
  9. 1/2 tsp vanilla extract
Instructions
  1. Pre-heat oven to 180C.
  2. Combine dry ingredients until well mixed.
  3. Add wet ingredients into dry ingredient mixture until they are all combined well.
  4. Transfer into a mug or small dish that has been greased with coconut oil.
  5. Bake for about 15 min or until a fork or toothpick inserted into the center of the cake comes out clean.
Notes
  1. To make this gluten free, you may also use buckwheat or coconut flour.
  2. Normal cow's milk may also be used if you are not vegan or lactose intolerant.
  3. If you want to be even faster, you may use a microwave to bake the mug cake. Baking time would be between 1-2 minutes. I'm against microwaves though so I use the oven and wait the extra time. 🙂
