Friday Favorites and the Start of Project Santorini

Happy Fri-yay dear friends!

How’s your week going? Mine is going pretty well so far and with the weekend just around the corner, things are about to get even better. In the last few days I’ve gotten a lot of things crossed off my to-do list(s) and have found some time for daydreaming as well. I can’t believe September is creeping up on us so quickly!  All the more reason to enjoy every minute of it, which is exactly what we intend to do. So we continue to be on full summer mode around here as well as project santorini (aka getting ready for the trip of a lifetime). Good times, people! 🙂 Here are some of this week’s favorites.

Continuing with our Greek vibes, check out this dinner party inspiration. Can someone please invite me for a dinner like this? All of this gorgeous Mediterranean food and even more gorgeous table setting has got me going ga-ga! I want some of that Greece gorgeousness!

Along with a slight obsession with everything blue and Mediterranean, #projectsantorini has also gotten me very motivated for working out. So much that I even signed up for a new “gym membership”. I’m usually more into working out at  home or outside but with my last gym membership having expired a few weeks ago and me not being so thrilled with their service, I decided to try something new. I signed up for Somuchmore, which is basically a card that gives you access to a BUNCH of gyms in your city. This way it’s impossible to get bored of the same place and the same classes. Bonus point: the gym that one of my good friends goes to is included in this package deal. We had a blast working out together this week! So far, I’m super psyched…will report back as I use their service more.

To fully take advantage of my new gym pass, I decided to take some time for a mini-spa after working out. This included a nice exfoliation followed by a visit to their sauna. The gym I am going to has a lovely sauna and wellness room. I used my friend Lizzy’s DIY coffee scrub recipe for this, which you can find here. You only need a few ingredients that you probably already have in your kitchen (coffee, coconut oil, sugar). Plus it’s super easy and fast to make and leaves your skin as soft as a baby’s bottom.

Something also equally important to working out is eating a protein-high diet to enable muscle development as well as increase your metabolism. If you, like myself are in a constant search for up-ing your protein game without meat, here is a great collection of recipes for you. Whether you are vegetarian, pescatarian or are just wanting some recipe inspiration for meatless Monday or meatless whatever day of the week, this shows some good alternatives to skip on the meat but not on the protein. I’m especially fond of vegan tacos and chili. Even Tore, a meat eater, loves my vegan chili. This will be definitely a recipe to share with you guys in the upcoming months. Stay tuned 🙂

Now on a more personal note, I’d like to share with you that I have recently started a gratitude journal. Things have been changing a lot in the past months so to keep in tune with myself, I have been focusing more on things such as meditation, yoga and a new activity this week: being more proactively grateful. They say the secret to having it all is realizing you already do. Like myself, you have probably already heard this, many times in fact, but I wanted to go deeper in the subject. I wanted to comprehend better how being grateful  is actually a benefit, how positivity, a sense of appreciation and a focus on the present (and fleeing) moment is the key to ultimate happiness and joy. Being a scientist, I have an inclination for research and getting deep into technical explanations. During my research I found this scientific paper  online that explains what is gratitude and how it affects our well-being. I hope you enjoy this reading as much as I did.

Time to get ready for the weekend. And this weekend we will have warm temperatures and a lot of sunshine, which means we will be enjoying time outside to the max! This summer has been the best ever!!! Have a great weekend!
