A sweet ode to the Oktoberfest: a vegan chocolate and beer cake

O’zapft is…soon.

More specifically next Saturday, at noon sharp when Munich’s mayor will be tapping the first keg of beer screaming that phase, which in Bavarian means ‘it’s tapped’. That marks the official start of the Oktoberfest. In that moment, a party with millions of visitors that flocked from all over the world begins; where beer is not leisurely sipped, but rather gulped down, even if the price is quite high. There is stamina to be shown off after all!

And just like that culture gaps are magically bridged in the blink of an eye and your table neighbors become your best friends and favorite dancing partners… Oktoberfest is quite amazing! But intense, very intense indeed. All that beer and fatty food that follows it can take a toll in the body. I honestly can’t handle it. Hours of beer drinking and pretzel eating are just too much for me. So, in the next weeks I thought of sharing some recipes that celebrate beer, in all its glory, but that are healthy at the same time.

Today we start with a rather unexpected food combination: beer and chocolate: Tore and mine’s favorites. He likes the beer and I love the chocolate. Together, we and the recipe, make for the perfect marriage! The bitterness of the beer combined to the sweetness of the chocolate makes for an excellent pairing. For sweets I prefer using dark beer though because I find the taste to be more balanced that way.

It’s a love story for the books!

By using spelt flour and keeping the cake vegan and refined sugar free, this is not something that will feel heavy in your stomach. But, it doesn’t, in any way, miss out on any flavor and is deliciously moist. As a serving suggestion I topped our Ode to Oktoberfest Chocolate and Beer Cake with some coconut whipped cream and almond pieces for some crunchiness. I chose that to resemble the beer’s foam that sits on top of the glass.

For the coconut whipped cream, I whipped chilled coconut cream with a bit of stevia. If you can’t find coconut cream, you may use canned coconut milk and follow these directions to get similar results. So in the end, this is actually a beer, chocolate and coconut cake. Not the most common of flavor pairings but I promise you, the taste is quite good.

Ode to Oktoberfest Chocolate Beer Cake

  1. 170 g vegan butter
  2. 80 g coconut sugar
  3. 175 g spelt flour
  4. 100 g ground almonds
  5. 40 g dark cacao powder
  6. 180 g applesauce
  7. 1 tbs baking powder
  8. 120 ml dark beer
  9. 1 tbs agave nectar
  10. 100 ml coconut milk
  1. Pre-heat oven to 180°C.
  2. Butter and flour your baking pan.
  3. Beat the vegan butter and the sugar with an electric mixer until smooth. Add the applesauce until well combined.
  4. Combine all dry ingredients in a separate bowl.
  5. Mix the beer, milk and agave in another bowl add that to the butter, sugar and applesauce mixture.
  6. Sift the dry ingredients and add that to the rest until well combined.
  7. Bake for around 55 minutes, depending on your pan size and your oven.
