Happy Sunday!
Valentine’s Day is just around the corner and my favorite way to celebrate it is with a sweet and healthy Valentine’s morning breakfast in bed! I love the idea of getting all dressed up for Valentine’s dinner, but there’s also something incredibly romantic about just waking up together, staying in bed for a couple extra hours, and treating my hubby to a special breakfast.
So, on the menu today we have 3 super easy and (somewhat) healthy breakfast recipes plus a bonus printable for your special swolemate 😉 Buon appetito!
I also love mimosas for a lazy Sunday breakfast. This one has a special twist by using raspberries and Chambord liqueur instead of orange juice.


- Dough
- 260 ml lukewarm almond milk (or milk of choice)
- 2 1/4 tsp instant yeast
- 80 ml beet juice (or water if you don't care for the pink color)
- 3 tbsp moscovado sugar
- 445 g spelt flour
- 1 tsp fine salt
- Filling
- 280 g frozen strawberries
- 2 tsp stevia
- 1 tsp cornstarch
- 2 tsp fresh orange zest
- Preheat oven to 180°C.
- Heat milk until lukewarm and dissolve the yeast in it.
- In the bowl of a stand mixer fitted with the dough hook, add the milk and all other dough ingredients and stir until combined. Turn mixer on medium speed and knead for 5 minutes, or until smooth.
- Remove dough to a floured work surface, cover, and let rest for 20 minutes.
- In a medium bowl cut up frozen strawberries and combine with stevia, cornstarch and orange zest.
- After dough has rested, use a floured rolling pin to roll it out into a rectangle, about 1/2 cm thick. Spread evenly with strawberry mixture.
- Starting on the long side, tightly roll dough up, stopping at center. Roll the other side up so that the two sides meet in the middle. Gently press together.
- Use a very sharp knife to cut dough into 10 equal pieces. Shape pieces into hearts by pinching the bottom of roll between two fingers.
- Place in greased baking sheet. Bake for about 25 minutes, or until lightly golden brown.
- If you feel like getting a bit of an arm workout, knead the dough by hand.


- Whole wheat sliced bread
- Cottage Cheese
- Low-fat ham
- Using a heart-shaped cookie cutter, cut the sliced bread into heart toasts.
- Toast them until golden brown using a toaster or frying pan.
- Top with cottage cheese and ham.


- Prosecco
- 1/2 cup of mashed raspeberries
- Chambord liqueur
- Mash the raspberries and divide between 2 champagne flutes.
- Top the drinks off with prosecco, gently stirring if necessary to combine.
- You may strain the mashed raspberries if you don't like to drink the seeds.
