My Recipe For an Ultimate Chocolate Energy Ball

Happy Sunday!

Today’s recipe is all about my love for chocolate. Yes, I have a thing for chocolate and to be honest, I probably ate one (or even more) too many sugary chocolate bars when I was a child and a teenager. You know those who list sugar as their first ingredient? Oh yeah, I loved those.

My taste has evolved since then and I prefer less sugary treats to those sugar bombs of the past. But my love for chocolate is still going strong. 🙂 So today I’d like to share with you one of my new go-to recipes for that mid-afternoon treat. A healthy snack that kicks your cravings to the curb, that is full of great for you superfoods and that gives you plenty of energy to finish your work for the day and keep you going at the gym afterwards.

These energy balls are filled with all the most amazing superfoods in the world: almonds, walnuts, raw cacao, chia seeds, coconut oil, pumpkin seeds and medjool dates. They are healthy and unbelievably delicious! Plus, if you have a good food processor, this will take you only 5 minutes to make. Easy peasy, make ahead snacks for the whole week. Hooray for that!

  1. 100 g of almonds
  2. 60 g of walnuts (or any other nut)
  3. 2 tablespoons of chia seeds
  4. 2 tbsp pumpkin seeds
  5. 40 g coconut butter
  6. 8 medjool dates (pitted)
  7. 1 tbsp of coconut oil
  8. 1 tbsp of almond butter
  9. 1 tablespoon of raw cacao powder
  10. 1 tsp almond extract
  1. Start by processing the almonds, walnuts and chia seeds in your food processor. Blend for 1 minute, until you have a coarse flour-like consistency.
  2. Add the remaining ingredients. Process for another minute until a stick dough forms.
  3. Use your hands to roll the mixture into small balls and store in the fridge.
