A valentine’s Day Breakfast that is Both Healthy and Sweet

I know, it seems like we have fallen off the face of the earth…or something like it. But, as you know…life is busy, things get in the way, and before you know it almost nine months have gone by and no new posts from us. #sorrycrazybusy

This blog is something we take great pride on and it’s a pleasure for us to share our fitness and clean eating tips with you all, as well as a sharing a bit of our lives. We can’t promise to be super on top of posts every week, but we will try to make them more frequent than in the past months.

So, with Valentine’s Day right around the corner, I thought I’d share with you a sweet and a savory breakfast/brunch option with some rosé prosecco because #roseallday. Both recipes are easy, healthy and with a romantic twist.

If you feel like a savory breakfast, this beetroot avocado spread is a wonderful option to show your special someone some love.

You Make My Heart Skip a Beet Spread

Ingredients
  1. 1 small cooked beetroot
  2. 1/2 avocado
  3. 1 tbsp vegan cheese spread (or normal cheese spread for non-vegan option)
  4. 1/3 tsp lemon juice
  5. 1/3 tsp paprika powder
  6. salt to taste
Instructions
  1. Blend all ingredients with a food processor or nutribullet
  2. If you're feeling romantic, cut bread slices with a heart cookie cutter
  3. Spread on toast or crackers
  4. Sprinkle with sprouts for an additional vitamin kick (I used broccoli sprouts)

 If you prefer a sweet breakfast, this protein-rich twist on the classic french toast will cater to your sweet tooth while keeping your blood sugar stable because of the protein powder addition.

Ingredients
  1. 2 eggs
  2. 2 tsp protein powder (I used Veganz chocolate peanut butter)
  3. 6 pieces of toast
  4. coconut oil
Instructions
  1. Add coconut oil to a frying pan
  2. Combine eggs and protein powder in a small bowl and mix
  3. Dunk toast into egg-protein powder mixture until both sides are evenly coated
  4. Cook with coconut oil until both sides are golden brown
Notes
  1. The topping choices here are endless. We used bananas and maple syrup, but you could try jam and other fruits of your preference.
